Fruit cake chocolate bites
I love a good old slice of Christmas Cake over December at tea time. So, even though a treat here and there may be fine...a whole month of yumminess is a bit much if you are keen to keep a happy bod. Try this great alternative for fruity flavour over the festive season.
1 full slab 75-90% Dark chocolate (Lindt is my favourite)
50g Unsalted raw nuts (almonds, pumpkin seeds, macadamia nuts, pecan nuts)
1 handful of dried berries (cranberries, goji berries, raisins, dried dates)
1 shot (30ml) brandy
1 Tsp instant coffee powder or an espresso shot
3 drops of stevia liquid or sweetener of choice to taste
Start by melting the chocolate in a glass bowl over a pot of hot water, slowly mix in the dash of brandy & the coffee.
Pour out dots of joy onto a baking sheet, add some nuts and dried fruit, pop into the fridge until set.
