Banana bread balance

I just love bananas! They are jam packed with natural fiber & nutrients. I think its safe to name them nature's very own energy bar.

Here is the perfect feel good, banana loaf recipe that you can serve up hot & toasted as a breakfast or enjoy straight out of the fridge as a little boost just before your workout & guess what… its Sugar Free, Gluten free, Wheat free, what more could you ask for!

3 ripe bananas
4 Tablespoons normal butter, coconut oil or organic nut butter melted
3 large eggs
1 Tablespoon vanilla extract
2 cups almond flour
1/4 cup desiccated coconut or coconut flour
2 Tablespoons flax seeds or meal (optional)

1/2 cup xylitol/sweetener powder of choice/raw honey
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt


1-2 scoops vanilla protein powder
1/2 cup raw nuts, chopped


Preheat the oven to 180º.

Line a loaf pan with baking paper or grease with butter.

In a large bowl, mash the bananas up really well. Whisk in the wet ingredients, combining very well. 

In another bowl, sift together the dry ingredients, except the nuts. Make sure you break up all the flours (coconut flour tends to be especially clumpy).

Stir the dry ingredients into the wet ingredients with a spatula to combine. Stir in the nuts. 

Pour the batter into the pan and bake for 55 minutes, until golden brown and an inserted toothpick comes out clean. 

Anna's Tasty Tips:

You can serve it with raw nut butter and fresh banana slices

Pop into the fridge already sliced and in the morning you can quickly toast a slice or 2 for a quick brekkie.
