2 Egg whites
2 Tbs desiccated coconut or almond flour
1 Tbs Flaxseed powder (optional)
½ tsp baking powder
½ tsp cinnamon
1 tsp vanilla essence
Spray a bowl with non-stick spray
Using a whisk mix together all ingredients until well incorporated.
Pour the mixture into the bowl and pop it into the microwave on high for about 90 secs (until it has set)
To Serve: Place the egg roll onto a warm plate, spread with butter and cinnamon honey/xylitol, sugar free jam or with a nut butter of your choice.
Anna’s Tasty Tips:
You can either roll it up and eat it like a pancake or even pop it in the toaster and eat it like a piece of breakfast toast.
I often love adding ½ mashed banana for a banana bread version.
