Hot cross bun muffins
Happy Easter everyone! Waking up this morning all I wanted for breakfast was a warm toasted Hot Cross Bun. The smell of cinnamon and hot baking goodness in the air….mmmm! Eating clean doesn’t mean that we can’t have fun. Indulging on the odd occasion with some whole healthy ingredients will satisfy that sweet tooth in a way that keeps your heart, body and soul happy.
1 cup Raisins
1/3 cup Coconut milk
1/2 cup Maple syrup, raw honey or granulated sweetener of choice
2 cups Almond flour
1/2 tsp Baking soda
1 tbsp Cinnamon
1 tbsp Coconut flour
1/2 tsp Cloves
1 Pinch Salt
1/4 cup Coconut oil
Pre Heat the oven to 180 Degrees C
Coat a muffin tray with a non-stick spray
Sift & stir all dry ingredients together in a bowl
In a separate bowl, mix together all wet ingredients
Grate the apple and add both the apple and raisins to the wet ingredients.
Pour the dry ingredients into the bowl with the wet ingredients and blend well
Pour mixture into silicon or paper cups in a muffin tin
Bake for 20-25 minutes, a fork should come out clean when ready.
Remove from the oven and allow the muffins to cool before serving.
