Fish foil package

Like many of you I have a fairly busy average day. But being a dancer it runs a little later than usual with some classes in the week only ending after 7 or even 8PM. That means that I don't have much time to get home and prepare a whole healthy meal from scratch. So I have come up with a few great creative recipe ideas to help you stay on track in your healthy balanced life, no matter who you are from professional dancer, model, student or mom.

This Fish Foil Package recipe take only a few minutes to prepare and can last for a few days in the fridge, ready to be chucked into the oven.

Ingredients:

180g fish fillet per person (I enjoy salmon or tuna, but any fish will work)

8 fresh green asparagus

2 cloves garlic

1 lemon

Salt, pepper & dried rosemary or parsley

1 tsp coconut oil/olive oil

30cm foil per package

Method:

Pre heat the oven to 180 degrees C, Cut as many sheets of foil as per the number of servings. Spray the inside of the foil with a non stick spray.

Place the 8 asparagus spears in the centre of each foil sheet, place the fish on top.                  Season with salt, pepper and herbs.                                                                                               Slice the lemon in half and squeeze juice of 1/2 lemon over the fish fillet. Slice the other half into 3-5 slices and place on top of the fish along with the 2 whole peeled cloves of garlic.            Drizzle with the oil.

Wrap the foil right side over left, roll the bottom opening up until 1/2 inch from the fish, repeat with the top until a sealed package is created. 

Place in the fridge until needed

Bake at 180 degrees C for 10 minutes [5 mins per 100g is recommended for fish]

Remove from the oven an allow to rest for 5 minutes.

Anna's Tips- I sometimes just eat it straight out of the foil with a fork. But if I have time and want the fish with a nice char on the skin, I heat a skillet with a little coconut oil and sear the fish before serving.
