Italian herb rice/caulirice with roast veg & hallumi

This is a great dish to prepare ahead of time and can be enjoyed as a warm hearty meal in winter or as a cold salad during summer. Plus it is an incredibly delicious option if you are ever on a budget, to all those students out there, or moms with lots of mouths to feed.

This dish is so versatile and is easily adapted to vegan, vegetarian, LCHF you name it.

Ingredients per portion:

1 cup cooked brown rice or cauliflower rice

1Tbs olive oil

Fresh Basil leaves & Rocket/Baby spinach

½ tsp Dried oraganum

1 Red Bell Pepper

1 small onion

½ cup steamed butternut cubes

8 dice sized pieces of halloumi chopped

Method:

In a bowl mix together the rice/caulirice with the fresh and dried herbs and leaves

In a hot pan brown the onion

Add into the pan the chopped bell pepper and butternut with 1 Tbs olive oil until charred, add in the cubes of halloumi until brown and cooked.

Toss the grilled bits into the rice gently with a fork

Season with salt and pepper & garnish with a few extra leaves of basil.

Anna’s Tip:

You can substitute the halloumi with grilled chicken, tofu or feta
